In any card game tournament, if the number of competitors is huge, the players will be paired randomly and they will go for 1-1 competition. This will be very much similar to the single-elimination format, but the players will not be dropped unless they have two losses.
In fact, just after the first round, the tournament will be divided into "all wins" and "one loss". You can continue with the game until there will be zero-loss player and one-loss player. Both of them will play for the championship title. Now the one-loss player will go on to defeat the no-loss player at least twice to win. If you want to have a blackjack tournament, you can actually go for a Swiss-style format. There you will have uneven number of players.
